In-house invention, made with the grapes from a well located single vineyard in Valpolicella Classica, called Ca’ Carnocchio. The vinification is similar to Amarone, but the drying and aging processes are shorter.

 

Alcohol Content: 14,5%

Grape Varieties: 90% Corvina and Corvinone; 10% Rondinella, Croatina and Oseleta

Vineyards: Ca’ Carnocchio is one of our best vineyards, located in Fumane, in the heart of Valpolicella Classica

Wine Making: Careful selection of grapes during manual harvest, followed by natural drying process for 3 months

Vine Training: Pergola and Guyot

Ageing: 24 months in barrique, 6 months in bottle. Could be enjoyed for 15 years

Pairing: Grilled, boiled or roasted meat and aged cheese. Risotto “isolana” (with pork), meat and vegetarian lasagna

Serving Temperature: 18°C/ 64°F. Best to open one hour ahead of serving
