The Art of picking and drying the grapes

Only the best grapes are carefully selected for the drying process
Natural drying process on top of the hill in Ca' Carnocchio, Fumane. This process is necessary for the production of our Amarone, Recioto, Ca' Carnocchio and Passito wines.
Grapes after the drying process, rich in natural sugars, which lead to a higher final alcohol content. The length of the drying process is between 3 and 5 months. The grape weight loss after the drying process, is approximately 50%, at the same time there is a decrease in acidity and an increase in glycerine and polyphenols, plus a 30% rise in sugar content.
